Perfect Thai Jasmine or Basmati Rice

Ingredients:
1 cup Thai Jasmine or Basmati white rice
1 ¼ cup water or broth
2 bay leaves
avocado oil or butter
Sea salt
Dill, lemon juice or dried lemon peel
Directions:
Heat saucepan over medium heat. Once hot, add some oil or butter.
When oil is shimmering, add dry rice and stir to coat. Continue stirring for 1-2 minutes until fragrant.
Add chosen liquid and 2 bay leaves. Bring to a boil.
Cover and reduce to simmer. Simmer for 18 minutes.
Remove from heat and let sit for 5-10 minutes. Then stir and add more butter and season with sea salt to taste.
Delicious variation: add fresh or dried dill and juice of ½-1 lemon
Et voila! Serve alongside your favorite dish.
Recipe is easily doubled.
