5-Minute Cherry Sorbet

Ingredients:
4 c Frozen Dark Sweet Cherries
2/3 c Extra Virgin Olive Oil
1/3 c Raw Honey
1/4 - 1/2 tsp Sea Salt (to taste)
1/3 tsp Almond Extract
Add-ins of choice: dark chocolate chips, cacao nibs, slivered almonds or pecans, etc.
Instructions:
Add cherries to food processor or blender. (If using a blender, it might be wise to let the cherries warm up a bit before blending). Turn on the unit and blitz, scraping down the sides after about 30 seconds.
In a measuring cup, mix the olive oil, honey and almond extract.
Turn the unit back on and drizzle in the oil/honey/extract mixture; add in the sea salt. Continue blending until desired texture is reached; the oil will emulsify and get creamy as you blend. (I left some cherry chunks in mine.)
And, that's it! When fresh, it will be like soft serve yogurt. If you'd like a firmer texture, freeze for 6+ hours. The end product remains remarkably creamy after freezing.
