Plantain Breakfast Bread

Ingredients:
3 large yellow plantains, well mashed or pureed
2 eggs
½ cup avocado oil or coconut oil, melted
1 tbsp vanilla extract
150 grams oat flour (can be made easily by grinding rolled oats in a blender or food processor)
2 tsp cinnamon
1 tsp baking soda
½ tsp sea salt
Instructions:
Preheat oven to 350 F
Mix puree, eggs, oil, vanilla in large bowl, until homogenous.
Add dry ingredients and blend slowly, until homogenous.
Pour into greased 8.5x4.5 inch loaf pan or dish.
Bake for 50-60 min until set.
