Plantain Breakfast Bread

Ingredients:

  • 3 large yellow plantains, well mashed or pureed

  • 2 eggs

  • ½ cup avocado oil or coconut oil, melted

  • 1 tbsp vanilla extract

  • 150 grams oat flour (can be made easily by grinding rolled oats in a blender or food processor)

  • 2 tsp cinnamon

  • 1 tsp baking soda

  • ½ tsp sea salt


Instructions:

  • Preheat oven to 350 F

  • Mix puree, eggs, oil, vanilla in large bowl, until homogenous.

  • Add dry ingredients and blend slowly, until homogenous.

  • Pour into greased 8.5x4.5 inch loaf pan or dish.

  • Bake for 50-60 min until set.
